Friend, when you slice into one of Roy's Nitrate-Lover's Meat Logs, you can taste the difference. That's the unmistakable bright-pink glow of a meat log cured with conviction.
Each two-pound log is brined for thirty-six hours in a saturated sodium nitrite solution, smoked over hickory chips, and aged in our climate-controlled meat parlor until it achieves the rosy hue and shelf-stable resilience that have made our logs a Burbank pantry staple since 1952.
